serves two
6 Anchovy fillets, chopped and crushed.
2 cloves or garlic, chopped and crushed.
200g spaghetti
1 head of broccoli, cut into florets
Tablespoon olive oil
Pinch of chilli flakes
Parmesan to finish
Drop the pasta into plenty of boiling salted water. Time it for a about a minute less than indicated on the packet.
- Gently fry the garlic and anchovy in the olive oil. The second the garlic starts to brown, turn off the heat and spoon in a little water from the pasta to cool down the pan, and stop it browning any further.
- Meanwhile, boil the broccoli in salted water for around 5 minutes until soft enough to mash.
- Using a slotted spoon, lift the broccoli from the water and drop strait into the pan with the anchovy and garlic. Roughly mash using a potato masher of a fork. Turn the heat back on and fry for about a minute until the pasta is ready.
- Once cooked al dente, add your drained pasta to the broccoli mixture. Stir through, check the seasoning and plate up. Finish with a good few grinds of black pepper, chilli flakes and parmesan.
