There's no need to overcomplicate this simple and fantastically satisfying dish. Bread, eggs, sugar milk. A little cinnamon dusted on top, if you like. You could also dust with a bit of nutmeg, or stir a touch of vanilla into the mix at the beginning.

Makes around 6 slices (depending on the bread you use)
6 slices of white bread or brioche (fresh or stale)
3 eggs
75g caster sugar
240ml (1 cup) milk.
Pinch of salt
butter for frying
Extra sugar for dusting - demarera works well if you have it.
- Whisk the eggs, sugar and milk together well, soak your slices of bread in the milk for 20-30 seconds and set aside for a few minutes. This allows the bread to be evenly soaked without getting too soggy.
- Fry the bread very gently in butter until lightly browned (2-3 minutes). Sprinkle the top (uncooked side) with sugar and turn over. Continue cooking until the sugar is well caramelised.
- Remove to a warm plate while you finish cooking the rest. Dust with cinnamon or nutmeg, or just keep plain.
