Know your values, now more than ever.

Perhaps the single most important counsel I give to clients wanting to open a restaurant is to know their values: to be absolutely clear on why they are entering this industry, what they hope to give, and what they hope to gain.

A state-sponsored last hurrah for sky-high ...

Like most people on the restaurant side, it’s easy for me to fall into the landlord-as-villain mindset. Restaurant operators will climb over each other to secure completely unaffordable leases and then cry foul when the monthly P&L draws gasps of despair.

Simple, doable, delicious sourdough

I’ve made this recipe as achievable as possible, but it’s not dumbed down at all - this makes a fantastic loaf, and it’s my go-to recipe at home.

If you're fairly new to making your own bread, I would only ask that you give yourself a little time to practice. Don’t expect perfection first time around.

Making your sourdough starter

Here’s the recipe I use for my sourdough starter. It’s so simple and it works! I’ve also included a load of notes below to help answer some questions you might have, and I’ll be posting more bread content very soon…

3 tips for opening a restaurant

There are so many things to consider when opening a restaurant, any attempt to cover them all would make for a very, very long article.

That said, some are more important than others.

How strong is your roast potato game?

I don't often call food perfect. It's each to their own really. But when it comes to crunchy golden roast potatoes - it's pretty close to perfection.

If you want to up your roastie game - give this a try.

Bolognese abuse: Carluccio lays down the law

Antonio Carluccio tells a literary festival in Cheltenham that the British are terrible at Bolognese, and we all rush to nod in agreement and shake our heads at our own embarrassing incompetence.

As widely as this has been reported, there has been a distinct lack of commentary. The line seemed to be, 'it has been said, and by an Italian, therefore we must deal with it'.

Embrace your cooking disasters

Having people over for dinner and then serving them the very worst of your cooking is, well, pretty awful...

Fantastic Falafel

There are 100s of variations on falafel. This is a good, and fairly simple version. Just remember: to get that crunchy, loose textured falafel, you need to use raw soaked chickpeas, not chickpeas from a can.

Easy - delicious - french toast

There's no need to overcomplicate this simple and fantastically satisfying dish. Bread, eggs, sugar milk. A little cinnamon dusted on top, if you like.

Coconut rice

One of my all time favourite stand by dishes, great on it's own, or as side.

Mix and match any of the ingredients here, or just have it plain. Or with a bit of soy. Whatever you like.

One of the most perfect balances of textures and flavours you could imagine. This dish exists all over the Mediterranean and beyond. This is my version.
